Spring quiche with asparagus

Treat yourself and your family with fragrant spring quiche with asparagus according to a wonderful recipe from Olga Geyets. ⠀⠀
Ingredients:
- 300 g green asparagus
- 170 g rice flour
- 100 gr buckwheat flour
- 125 grams of ghee or butter
- 1 tsp saffron
- some pepper
- 1/2 tsp salt
- 1 bell pepper
- 100 g halloumi
- 100 g sheep milk cheese
- olives
- 4 eggs
- 2 tbsp coconut milk or cream
- smoked salt
Cooking method:
- Mix flour, butter (room temperature), salt, saffron and pepper, form a ball and wrap it in plastic. Put it to the refrigerator for 1 hour.
- Clean the bottom of the asparagus and cut into thin slices.
- Chop the peppers and olives.
- Beat eggs in a bowl and add 2 tbsp. of water or coconut milk/cream.
- Cut halloumi into cubes.
- Take the dough and spread it in a greased mold. Pierce it with a fork and put to the oven, preheated to 170 degrees, for 10 minutes.
- Then take it out and add the vegetables, pour the eggs, add halloumi and grated sheep milk cheese on top.
- Put it to the oven for another 40 minutes.
