Spring quiche with asparagus

Treat yourself and your family with fragrant spring quiche with asparagus according to a wonderful recipe from Olga Geyets. ⠀⠀

Ingredients:

  • 300 g green asparagus
  • 170 g rice flour
  • 100 gr buckwheat flour
  • 125 grams of ghee or butter
  • 1 tsp saffron
  • some pepper
  • 1/2 tsp salt
  • 1 bell pepper
  • 100 g halloumi
  • 100 g sheep milk cheese
  • olives
  • 4 eggs
  • 2 tbsp coconut milk or cream
  • smoked salt

Cooking method:

  1. Mix flour, butter (room temperature), salt, saffron and pepper, form a ball and wrap it in plastic. Put it to the refrigerator for 1 hour.
  2. Clean the bottom of the asparagus and cut into thin slices.
  3. Chop the peppers and olives.
  4. Beat eggs in a bowl and add 2 tbsp. of water or coconut milk/cream.
  5. Cut halloumi into cubes.
  6. Take the dough and spread it in a greased mold. Pierce it with a fork and put to the oven, preheated to 170 degrees, for 10 minutes.
  7. Then take it out and add the vegetables, pour the eggs, add halloumi and grated sheep milk cheese on top.
  8. Put it to the oven for another 40 minutes.
