Poached saffron pears


  • 6 solid and mature pears;
  • 5 cups of water;
  • 5 cups of sugar;
  • saffron 0.5 g;
  • 10 cardamom seeds;
  • 6 ml pear brandy (cognac can be used or any other vodka except moonshine);
  • whipped cream for decoration.

Cooking method:

  1. Peel the pear. Cut off the lower part of the pears leaving the stalk so you can place it steadily on the plate.
  2. Pre-soak saffron in 1-2 ml of hot water. In order to reach maximum color and flavor extraction allow it to soak for 1 hour.
  3. Pour water, sugar, cardamom seeds and alcohol in a saucepan and bring to a boil. Add the pre-soaked saffron.
  4. Put the pears in a syrup and cook them until they get soft.
  5. Then let the pears and syrup to cool. The dessert can be prepared couple of days ahead of your dinner and stored in the refrigerator.
  6. Garnish with whipped cream and enjoy poached saffron pears dessert!
