Recipes with saffron
Poached saffron pears
Ingredients:
- 6 solid and mature pears;
- 5 cups of water;
- 5 cups of sugar;
- saffron 0.5 g;
- 10 cardamom seeds;
- 6 ml pear brandy (cognac can be used or any other vodka except moonshine);
- whipped cream for decoration.
Cooking method:
- Peel the pear. Cut off the lower part of the pears leaving the stalk so you can place it steadily on the plate.
- Pre-soak saffron in 1-2 ml of hot water. In order to reach maximum color and flavor extraction allow it to soak for 1 hour.
- Pour water, sugar, cardamom seeds and alcohol in a saucepan and bring to a boil. Add the pre-soaked saffron.
- Put the pears in a syrup and cook them until they get soft.
- Then let the pears and syrup to cool. The dessert can be prepared couple of days ahead of your dinner and stored in the refrigerator.
- Garnish with whipped cream and enjoy poached saffron pears dessert!
