Salad with three types of asparagus

Salad recipe with three types of asparagus (white, purple and green) from сhef Robert Pryadchenko will surely win the heart of any gourmet. It even looks like a piece of art. And the sauce is just delicious!



  • white, green and purple asparagus — 2-3 stalks of each
  • 4-5 cherry tomatoes (different colors)
  • ¼ red onion
  • radish — 3 pcs.
  • salad mix
  • For dressing:
  • 10 g honey
  • 10 g American mustard
  • orange juice (to taste)
  • 3-5 g balsamic vinegar
  • 10 g olive oil
  • 25 g Greek yogurt 3%
  • Optional:
  • ½ avocado
  • fresh cucumber
  • anchovy

Cooking method:

  1. First you need to blanch the asparagus, the white one for 3-4 minutes, then green and purple ones for 1 minute, then put them to cool in ice water! For the salad, you will also need cherry tomatoes (you can have different colors), red onions, radish, salad mix. You can add avocado, fresh cucumber and anchovy.
  2. For dressing: honey (10 g), American mustard (10 g), fresh orange (to taste), balsamic vinegar (3-5 g), olive oil (10 g), Greek yogurt 3% (25 g). Mix everything thoroughly with a whisk!
  3. You can cut the ingredients and put on the plate following the example on the photo or according to your own imagination.
