A real Instagram breakfast with asparagus. The recipe of a beautiful and delicious avocado toast with asparagus and poached egg from YoungChef Andrey Petrenko.
Ingredients:
- wheat or whole grain bread
- 2 stalks of asparagus
- 1 avocado
- 1 chicken egg
- olive oil
- juice of 1 lime
- salt, pepper
Cooking method:
- Cut the avocado into small cubes, add olive oil, salt and lime juice.
- Cook a poached egg. Add apple cider vinegar to boiling water and beat in an egg without a funnel, after 3 minutes remove from heat so that the bubbles do not burst the egg white. The egg can be sprinkled with salt, paprika, nuts and olive oil before placing on toast.
- Toast the bread. Place the guacamole on it, top with thinly sliced fresh asparagus and with a poached egg.
