Asparagus with scallops

Ingredients:

  • green asparagus
  • avocado
  • scallops (or shrimp or fish)
  • salt pepper
  • olive oil
  • For the sauce:
  • 4 tbsp. of white miso pasta
  • 1 tbsp. of Mirin rice sauce
  • 2 tbsp. of rice vinegar
  • 1 tbsp. of sesame oil
  • grated ginger
  • lime juice

Cooking method:

  1.  Simmer the asparagus in a water bath for 5-8 minutes.
  2. Fry the scallops in olive oil in a well-heated frying pan for a couple of minutes on each side.
  3. For the sauce, combine all ingredients.
  4. Mash the avocado with a fork, add oil, salt and pepper.
  5. Combine everything in one dish, decorate with seeds, microgreen and edible flowers.
